En la noche del 1 de mayo, hice algo que me encanta y ansiaba: Cocinar.
Amasé dos masas; una salada para la cena (pizzas) y otra dulce para hacer pastafrola (un pastel relleno de dulce que es común por estos lares) y pepas de membrillo, unas galletas que Mi padre las preparó en forma de flor.
Esas fotos fueron tomadas cuando armaba la masa dulce. Luego, me fui a derretir el dulce de membrillo con un tenedor.
Utilicé la harina leudante de la marca Blancaflor, que es la mejor cuando se trata de preparar cosas dulces. Lo dijo mi padre, y no dudo de los que saben más sobre el tema.
Un día me convertiré en panadera (como lo fue mi padre de joven) y cocinaré cosas ricas en el hogar, como lo hace mi hermana de Uruguay; pues ambas eredamos el gusto por la panadería.
Aquí está el resultado; el resto lo hizo mi padre.

Ahora, procedo a compartirles una importante lección de este día: Si hacen aquello que les encanta y les motiva, su salud mental mejorará con el tiempo.

Recipe: Garlic Pepper Chicken (gai pad gratiem) 🇹🇭

No chili, lots of slow fried crispy garlic, and a pepper mix. A thai street food classic, nom nom. Next time I'll double the amount of pepper though

300 g chicken breast or thigh, cut into 1-cm thick slices
8 cloves garlic, chopped
1 Tbsp oyster sauce
1 Tbsp soy sauce
1 tsp Golden Mountain sauce (or substitute regular soy sauce)
1 tsp fish sauce
Black soy sauce, as needed for colour, about 1 tsp
1.5 tsp sugar
0.25 tsp ground white pepper
0.25 tsp ground black pepper
7-8 coriander stems, chopped
Water, as needed

Last night's tea - pollo con salsa de aceitunas Españolas (chicken with Spanish olives) and papas arrugadas (wrinkled potatoes).

The potatoes are cooked in very salty water, which is then boiled off to leave them a bit wrinkly with a salt crust. I tend not to cook with much salt so rather intense for me, though fun to try!

Both recipes from Omar Allibhoy's book Tapas Revolution.

I don't make pasta from scratch very often, but semolina flour makes it almost easy.

The recipe calls for a "playdough" consistency, and if you get to that consistency, the dough doesn't stick and can be twisted and shaped without breaking or falling apart. I was just amazed by the versatility of the dough and how easy it was to handle.

Key points:
▫️Spicy, really really spicy, and I make Thai food daily. Lip burning 🌶️🌶️🌶️🌶️ if authentic
▫️No coconut milk
▫️Tonnes of lemon grass and lime leaves are fried with the pork
▫️I use Kanokwan brand ready-made paste sold globally, 30g out of a 50g sachet. Still spicy as heck. Also Mae Jum brand in the UK. Maybe others ...

Recipe for two:

350g minced pork
1.5-2 tbsps Klua King curry paste
1/4 cup water or unsalted chicken stock
1-2 teaspoon fish sauce
2 tsp sugar
6-7 kaffir lime leaves, finely julienned
2 stalks lemongrass, shredded and finely minced (imho a must)
Fresh red chilies, cut into big pieces (optional)

It's fiery! I doubled the sugar above and added the juice of 1/2 a fresh lime to "tame" it slightly. Still lip burningly authentic levels 🔥

I am once again reminded of how superior carbon steel is to most other pans. Was making French Toast today and my parents’ hexclads were not cutting it. Got out my reliable “Harbinger of Good Taste” (my steel carbon pan) and it did a much better job with less cleanup.
